• Vinegar Water ratio by volume, not weight
• Salt ratio by weight, after combining vinegar and water.
• Steeping spices in the brine seems to help a lot
  • one challenge here is how to get an even amount of the steeped spices into each jar, as they tend to clump at the bottom of the pot
• Sous Vide at 140 F for 2:30
