Notes
- Vinegar Water ratio by volume, not weight
- Salt ratio by weight, after combining vinegar and water.
- Steeping spices in the brine seems to help a lot
- one challenge here is how to get an even amount of the steeped spices into each jar, as they tend to clump at the bottom of the pot
